Just three ingredients are used in this roasted radishes recipe. They’re bursting with delicious curry flavor and make a great side or salad topper and with minimal ingredients.
One of our farmers described 2021 as “The Year of the Radish,” because radishes were just flying off the shelves. It’s hard to know what made people so interested in radishes recently, but we’re excited about the resurgence!
Radishes are best known for topping salads or maybe a bowl of ramen, but, as Kitchen and Kay shows in this recipe, they are also delicious roasted.
Three ingredients–radishes, olive oil, and spices–are used to make these radishes. Pop them in the oven at 400°F for 30-45 minutes for a savory, unique take on this root vegetable.
If you’ve never been much of a radish fan, this recipe may change your mind! It calls for watermelon radishes, but we often have a variety of other radishes from our local farms that would also be great, like green meat, black, blaur, and french breakfast.
